Aubergine Kitchen is Going Back to School

Everyone who went to college understands how difficult it is to eat well as a student. When juggling classes, homework, and social engagements, it’s natural to devote less attention to the food you’re eating. This is why Aubergine Kitchen is thrilled to announce our newest location at Utah Valley University food court, located in Orem, UT.

Let us give you a little history lesson: Aubergine Kitchen was founded in 2014 by the Zanattas, a first generation American family from Brazil committed to the pursuit of a more straightforward, accessible, and enjoyable approach to healthy eating. Their mission was clear, and is reflected by an evergreen menu featuring flavors from around the world, made with only whole ingredients—unprocessed and unrefined. 

“One of our team’s core passions is educating the up and coming generation on how to be healthier and eat better,” said Jason Osmond, VP of Marketing. “Having a strong presence in a university will help us achieve this goal.”

The restaurant opened on September 20, 2022. The Aubergine Kitchen menu, which has been simplified for the UVU location, was initially influenced by the founders’ Lebanese, Brazilian, and Italian heritage. These founders recently returned from a world tour, actively seeking out ways to bring the best flavors from the four corners of the earth to an enriched menu coming this winter.

“Our food philosophy is very important to us, and is driven by several core principles,” said Elcio Zanatta, owner and founder of Aubergine Kitchen. “These principles offer peace of mind to our customers. No matter what you order, rest assured you are in a safe-haven of options that not only keep you healthy, but also taste great!”

“The Dining Services Administration at UVU is dedicated to providing students with a wide range of dining options,” said Ibrahim Tashman, Director of Dining Services at UVU. “Our partnership with Aubergine Kitchen gives students another healthy option on campus—a healthy body means a healthy mind.”

Aubergine Kitchen has 7 locations in Utah with our UVU Campus installment being our lucky number 7. Two more locations, one in Farmington and the other in St. George, Utah, are currently in construction and will be operational very soon.
